Royal Icing

This is the best icing I have found for my “Men of Ginger” and “Sugar Cookies” recipes.  I like using meringue powder instead of raw egg whites.

Ingredients:

1 pound powdered sugar
5 tablespoons meringue powder
food coloring (optional)

Directions:

Combine powdered sugar and meringue powder in a mixing bowl and beat on low speed.  Add water drop by drop.  You may not need all of the water.  Beat until the mixture holds a ribbon like trail.  If you like, you can tint the icing with a few drops of food coloring.
